Quick, easy variation of the original moscow mule, this cocktail recipe adds a touch of summer freshness with mint and melon flavors.

1 C Honeydew melon, cut into cubes
1 C Cantaloupe melon, cut into cubes
A few mint leaves
4 oz. Melon infused or regular vodka
1 bottle/can of ginger beer
Juice of 1 lime

Instructions

Cut both types of melon into cubes and add to food processor
Add lime juice and mint into food processor with melon, mix until smooth.
Fill copper mule mugs with ice and vodka
Add melon and lime mixture into mugs
Top with ginger beer
Garnish with mint or lime
