A Quick Cucumber Salad With Honey and Vinegar

A light and tangy cucumber salad recipe made with honey and vinegar. The flavors are freshened up by a sprinkle of fresh dill and this summer side dish is a healthy one that everyone will enjoy.

Ingredients

  • 2 large cucumbers, sliced
  • 1 shallot, sliced
  • 1/4 C white wine vinegar
  • 1/4 honey
  • 1 tbs fresh parsley, chopped
  • 1 tbs fresh chives, chopped
  • 1/2 tbs fresh dill, chopped
  • salt and pepper to taste

Instructions

  1. Slice the cucumbers and shallot and add to a bowl.
  2. In a small bowl, whisk together the vinegar and honey until the honey is completely dissolved. Pour the mixture on to the cucumbers.
  3. Add the remaining ingredients into the bowl and toss the cucumbers until completely coated in the dressing. 
  4. Cover, and chill for a couple of hours before serving for the best flavor. 
  5. Top the salad with extra fresh herbs before serving. 

Notes

Making the salad ahead of time gives the cucumbers some time to soak in the flavor. Chill for at least two hours prior to serving for the best flavor.

Cucumber Salad with Vinegar

I had a lot of fun this summer developing healthy versions of classic summer sides. I started with this healthy potato salad that was a favorite among family and friends. Then after a trip to South Dakota to visit family I started dreaming about a healthy and quick cucumber salad recipe. I enjoyed many spoonfuls of a delicious creamy version my aunt had made a few times, and that gave me the perfect starting point to create this version.

Instead of mayo, I opted to use a white wine vinegar as the base of the dressing for this healthy cucumber salad. To lighten and sweeten the vinegar I mixed in a good bit of honey before dressing the sliced cucumbers. If you are eating clean, avoiding preservatives and extra fat – this recipe is one you need to try.

How to Make This Summer Side Dish

This may be the quickest recipe I have on the blog, but I also use a mandolin slicer to prep the cucumbers. It’s one of my favorite kitchen tools because it cuts back on time and makes each slice the perfect size. So this is where I start – slicing the two cucumbers and adding them to a mixing bowl or straight into your serving bowl. Slice the shallot and throw them into the bowl. Whisk the honey and vinegar together and pour the mixture onto the cucumbers. Add an amazing amount of salt and a good crack of pepper. Give everything a really good toss until each cucumber is coated in the dressing. Top everything off with fresh parsley, chives, and dill.

I mentioned a bit about the ingredients above, but I wanted to note a couple more things here. If you don’t enjoy any of the fresh herb flavors included in the ingredients list, you can omit any or all and the salad will still have great flavor. Also, depending on the type of cucumber you are growing or have on hand you may need to peel them before using them for this recipe. When I photographed this recipe I was using a thin skinned variety, but if the skin is thick, the flavor may be bitter and may take over the taste of the salad.
