A quick and easy fresh tomato salad paired with a salty, tangy whipped feta. It’s an amazing way to enjoy tomatoes straight off the vine and the perfect salad to serve while your guests or kiddos wait for the main meal. 


  • 23 heirloom tomatoes, sliced
  • 1 C cherry tomatoes, sliced
  • 3/4 C feta cheese
  • 1/4 C whole milk
  • 1 Tbs olive oil
  • Freshly cracked black pepper, to taste
  • Fresh herbs for garnish


  1. Slice your tomatoes and add to your serving tray or platter.
  2. Add the remaining ingredients to a food processor or blender. Blend until all the ingredients are completely mixed and the cheese has reached a smooth consistency. If the cheese is too thick, add a bit more milk. 
  3. Add the cheese to the platter, drizzle with olive oil and freshly crack pepper for garnish.
  4. To garnish the entire salad, add soft herbs of your choice to the tomatoes. 
  5. Serve immediately, or store in a refrigerator until ready to serve that day.


You can make the whipped feta a day or two in advance. Store in an air tight container in the refrigerator. You can slice and store the tomatoes for a few hours before serving. Lay the sliced tomatoes flat, and covered in the refrigerator until ready to serve.
