Carrot and Ginger Cocktail Recipe with Honey Simple Syrup

A healthy, vodka cocktail with carrot juice, fresh ginger, lemon juice and honey simple syrup infused with thyme. It’s extremely delicious and a recipe that everyone at your spring gatherings will enjoy.



For the simple syrup:

  • 3/4 cup raw honey
  • 1 cup water
  • 45 sprigs of fresh time

For the cocktail:

  • 1.52 oz. vodka of your choice
  • 1-inch fresh ginger, peeled
  • 2 oz. carrot juice
  • 2 oz. lemon juice (about one whole lemon)
  • 1.5 oz. honey thyme simple syrup
  • ice


For the simple syrup:

  1. Add the honey and water to a pot and bring to a boil. Reduce the heat to a simmer and add thyme.
  2. Simmer for 8-10 minutes. Remove the pot from the heat and remove the sprigs from the syrup.
  3. Set aside to cool

For the cocktail:

  1. Peel the ginger and add to cocktail shaker. Muddle the ginger until completely mashed. 
  2. Add the remaining ingredients to the shaker and top with a few cubes of ice.
  3. Shake the cocktail until the shaker is completely chilled.
  4. Strain into two glasses.
  5. Garnish with sprigs of thyme and mint.


The simple syrup can be made ahead and stored in an air-tight container in the refrigerator for about a week.
