Gluten Free Spiced Pear Bread

An amazing combination of honey, nutmeg, cardamon, and cinnamon creates the incredible fall flavors that surround around the whole pears that are baked into this bread. Its moist, comforting, gluten free and made with zero refined sugar.

Ingredients

  • 3 ripe pears (do not use overly ripe pears)
  • 10 Tbs soft butter
  • 3/4 C coconut sugar
  • 1/2 C ground walnuts
  • 1/2 C rice flour
  • 1/2 C almond meal flour
  • 2 Tsp organic baking powder
  • 2 Tbs honey
  • 3 eggs
  • 1.5 Tsp cardamon
  • 1/4 Tsp freshly ground nutmeg
  • 3/4 Tsp cinnamon
  • 1 Tsp vanilla
  • 1 pinch of salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Grease a loaf pan. If you do not have a loaf pan that opens, line one you have with baking paper so the bread can easily be removed from the pan. If using baking paper, still make sure to grease the pan as it will sometimes stick.
  3. Beat the soft butter, the sugar, honey, salt and vanilla together for 3-4 minutes with a hand mixer.
  4. Add one egg at a time and beat to the butter mixture.
  5. Mix the rice flour, almond flour, baking powder, cardamon, cinnamon and nutmeg in a separate bowl, then add to the butter mixture and mix. 
  6. Stir in the ground walnuts (I used a food processor to grind the nuts) to the batter.
  7. Evenly pour the batter into the greased loaf pan. 
  8. Rinse the pears and pat dry. Place each pear on the top of the bread batter and once they are lined up how you like, press them down into the batter. 
  9. Put the bread into the oven and bake for 55 minutes. If the top of the bread is getting to brown before it is finished baking, cover it with tin foil and place it back into the oven until baked through.
  10. Let the bread cool before removing it from the load pan. Slice and serve. 

Notes

Do not use overly ripe pears – they will become too soft during the baking process and will become mushy, making it hard for the bread to bake surrounding the pears.
