Green Goddess Dressing

A sweet, tangy salad dressing packed with fresh herbs, garlic and lemon and a flavor that will dress up any summer salad or simple roasted vegetables. Easy to make with little mess.

Ingredients

  • 1/2 cup unsalted cashews, soaked
  • 1/3 cup fresh basil leaves
  • 1/3 cup fresh chives
  • 1/4 cup fresh tarragon
  • 1 garlic clove
  • 2 tsp capers
  • Juice of one lemon (about 3 tablespoons)
  • 1 tbs raw honey
  • 1/2 tbs champagne vinegar
  • 1 tbs coconut oil, or your favorite olive oil
  • 1 heavy pinch of salt
  • 1 heavy pinch of pepper

Instructions

  1. Soak the cashews in water for at least 4 hours. This can also be done overnight.
  2. Add all of the ingredients into a blender or food processor.
  3. Blend until the dressing is completely smooth.
  4. Add more salt or pepper to taste.

Notes

This dressing can be stored in an air tight container for up to a week in the refrigerator. If you do not have champagne vinegar you can omit this ingredient altogether and the recipe will still work.
