First of all, happy almost Thanksgiving! We made it. And whatever it looks like for you this year I hope you experience nothing but joy. Now on to the food. Christmas and Thanksgiving often has so many heavy dishes on the table, so this year I tried experimenting with Thanksgiving sides that are a bit on the lighter side. The sides should be quick and easy too, right? If you’re spending so much time prepping the star of the show, it’s perfectly acceptable to utilize simple recipes that will surround the main dish. This roasted green beans recipe uses less than 10 ingredients, but is jammed packed with fresh herby, garlicy flavors. Drizzle the end product with a bit of raw honey for a bit of sweet, extra flavor.

Roasted Green Beans & Potatoes

An easy, healthy Thanksgiving side dish to add to your holiday line up. These veggies can be prepped in advance, roasted the day of, and tossed together in honey to finish the dish.

Ingredients

Units
  • 2 +1/2 lbs. green beans, trimmed
  • 1+1/2 Lbs. baby potatoes
  • 1 sweet onion, roughly chopped
  • 6 cloves garlic
  • 1/2 olive oil
  • 1 tbs. fresh rosemary leaves, finely chopped
  • 1 tbs. fresh thyme leaves
  • 2 tsps. salt
  • freshly cracked black pepper, to taste

Instructions

  1. Pre-heat the oven to 400 degrees.
  2. Half, or quarter the baby potatoes depending on their size. I like to keep things bite sized for this recipe. Spread the potatoes and the green beans onto a large rimmed baking sheet. 
  3. Chop the onion and spread across the baking sheet.
  4. Smash the cloves of garlic and roughly chop before sprinkling over the vegetables. 
  5. Drizzle the olive oil over the potatoes, green beans and onion and sprinkle with the herbs, salt and pepper.
  6. Give everything a good toss and roast for 40 minutes. Serve immediately. 

Notes

Prepare the veggies ahead of time and store in an air tight container the day before. The herbs can also be chopped and stored as well. Drizzle the finished side dish with honey for added flavor and a light sweet flavor.

How to Roast Green Beans

Prep your oven to 400 degrees. While it’s warming, rinse and trim the green beans before placing them onto a large rimmed baking sheet. Evenly spread the green beans so that each bean has an equal chance of roasting to perfection. Give everything a good drizzle of olive oil, salt, pepper and desired seasonings before adding the veggies to the oven. To give this thanksgiving side a bit more dimension I added sliced baby potatoes that roast in the same amount of time as the beans.

Are Roasted Green Beans Healthy?

Green beans are an amazingly healthy side to enjoy. They’re packed full of fiber and low in sodium, which make them a great option for those watching their blood sugar.

I kept everything simple and dressed them in a bit of olive oil and some fresh herbs instead of the addition of heavy cream or cheeses sometimes used in traditional roasted green beans recipes.

Can I Pre-Make Green Beans?

A lot of pieces of this roasted green beans recipe can be prepped beforehand to save you time day of. You can chop and prep the veggies the day before and store them in an air tight container until ready to use.
