Gluten Free Fig Pizza

Pizza is something I plan to experiment a lot with this summer. It’s one of the best ways to utilize those fresh ingredients from the garden in a quick and creative way. We have also tried to morph into a healthier eating lifestyle (#newyearsresolutions) so when I spotted the gluten free fig pizzaare in the new Genuine Pizza cookbook I was intrigued. Pizza crust was one thing that I have never tried to make myself – but I’m never afraid to try something (at least once).

Another part to this recipe I liked, was that it appeared to be something that I could pull off during a weekday. Simple ingredients, the crust could be made ahead of time (hello lunch break) and stress-free toppings. And the toppings are right up my alley. Actually anything Eric and I can drizzle good quality balsamic vinegar on, is right up our alley.

So, I gave this a try. For my first crust-from-scratch attempt, I would say it turned out pretty good. It has just the right thickness to chewiness ratio – perfect for that balsamic drizzle. If the crust is pre-made (ours was) it takes about 15-20 minutes to prepare this pizza. So, it officially made the weekday meal planning list at our house.

This recipe makes enough dough for 4, 12-inch pizzas. However, I bet you have plenty of ingredients between your refrigerator and pantry to make a couple variations/creations of your own pizza. I used the rest of our dough for some breakfast pizzas, and this cookbook has great options for this as well. That’s the best part about pizza – you can literally put anything on it these days.

To me, the best kinds of cookbooks are the ones that empower the reader to try something new (like making pizza crust from scratch) and this book does that very well. Nothing is overwhelming – no one needs overwhelming.

To Make Fig Pizza

INGREDIENTS

  • Gluten free pizza dough (reference Genuine Pizza for the recipe – it’s a good one).
  • 6-8 dried figs
  • 2 cups Fontina cheese
  • Dried red pepper flakes
  • Arugula for garnish – you decide how much
  • Salt and pepper

INSTRUCTIONS

  • Pre-heat the pizza stone at 400 degrees Fahrenheit
  • Add all of the toppings onto the dough
  • Bake pizza for 10 minutes, or until crust is golden brown
  • Enjoy
