This is a total “use-what-you-have” Green Goddess Salad recipe. Normally, I would browse the fresh produce section, hand picking the most beautiful ingredients to use and photograph for this recipe. However, we are still in COVID-19 lock down so those luxuries are currently not available. That said, I did feel like this salad and it’s dressing were two amazing ways to use up the fresh greens in your fridge before they begin to wilt.
A Great Salad Recipe for Summer
This Salad on Sundays post is the perfect summer salad. The combination of flavors, the freshness of the greens, and the gorgeous colors make this a hit during the warmer months. It is extremely easy to put together, and to add personal touches. I get really excited when I can share recipes that you can make for two, or for a large crowd without having to do measuring math. This one is perfect for summer drop-ins from neighbors, friends and family – once we are all out of this lock down situation.
Because green goddess dressing is creamy, it is heavier than your average vinaigrette. Our recipe calls for cashews to give it that creamy consistency. Summer salad greens will hold up better under this dressing, as they are a bit stronger than spring or baby greens. If you love micro greens like I do, add them to the top of the salad as a garnish after dressing it so they don’t drown in a sea of green.

An Easy Salad Recipe
This is another reason why I decided to share this while we are all still in COVID-19 lock down. It’s an easy salad recipe that only requires a little chopping and one bowl or platter to assemble the greens. Once the salad is put together, dress it and enjoy! The only kitchen tool necessary is a blender or food processor for the green goddess dressing.
Our Green Goddess Salad Recipe
This salad gets it’s goddess status from the dressing. The mixture of fresh herbs (like basil, chives and tarragon) give it that amazing bright shade of green. The last lock down grocery run I made I was able to grab butter lettuce, regular lettuce, endive leaves, water cress (used on top of the salad once the dressing is poured), and fresh herbs. I already had kale so I added a bit of that as well. Put everything together with the green goddess dressing and you have a healthy, fresh, quarantine meal. Isn’t it strange that access to fresh produce has become so limited? So spoiled before all this happened.

Green Goddess Salad

Ingredients
- 2 cups chopped lettuce
- 1 cup chopped butter lettuce
- 1 cup chopped kale
- 1 handful whole endive leaves
- Watercress for garnish
- Fresh chives for garnish
- A good drizzle of our Green Goddess Dressing
Instructions
- Chop the lettuce, butter lettuce, kale, and chives.
- Assemble all the salad greens into a bowl, or onto a platter.
- Dress with green goddess dressing.
- Garnish the salad with the watercress leaves and chopped chives.
