When I think about how much summer is left this year, I start to feel panicky. We’ve had so much going on the last couple of months. It has been hard to slow down and take a minute – and I hate that feeling. We officially moved out of our first family home and are temporarily living with my parents (thanks mom and dad). That’s happening until our rental opens up (more on this later) at the end of August! Anyway, after we settled into our current living situation, I was able to sneak away and catch my breath with one of my dear friends Lydia Senef of Dressed In Grace. I needed someone to test this Minty Melon Moscow Mule recipe on and she was willing to give it a try!
I am constantly preaching simplicity – especially when it comes to recipes – and this cocktail certainly is. Lydia and I met for an evening picnic, so I diced up the honeydew and cantaloupe melon and blitzed it with the lime juice before I left. When we got to our picnic, I put it on ice until it was time to serve up. This recipe isn’t much of a stretch from the original, but the freshness from the mix of melon and mint is amazing. The drink finishes crisp and clean – perfect for a 90 degree day.

I did try a couple variations of this recipe before posting the final one here. First, I used regular vodka and thought the mint and lime overtook the flavors of the melon. So, I decided to try a melon infused vodka to reinforce the fruity flavors and it was delicious. That being said, you could go with what’s already in your stock of liquor and it’s tasty either way.
Another side note, if you don’t like mint (ohmygoshthat’scrazyilovemint) definitely leave it out and soley. If you do enjoy the freshness from the herb, then a little bit goes a long way. Too much and this mule recipe will quickly start to turn into a Mojito instead.

Quick, easy variation of the original moscow mule, this cocktail recipe adds a touch of summer freshness with mint and melon flavors.

Ingredients
- 1 C Honeydew melon, cut into cubes
- 1 C Cantaloupe melon, cut into cubes
- A few mint leaves
- 4 oz. Melon infused or regular vodka
- 1 bottle/can of ginger beer
- Juice of 1 lime
Instructions
- Cut both types of melon into cubes and add to food processor
- Add lime juice and mint into food processor with melon, mix until smooth.
- Fill copper mule mugs with ice and vodka
- Add melon and lime mixture into mugs
- Top with ginger beer
- Garnish with mint or lime
