I made this Green Goddess Dressing Recipe for the most recent Salad on Sunday's recipe and it's extremely delicious. Both are extremely easy to whip up. We are still in the midst of dealing with COVID-19 lock downs, so I am feeling pretty passionate about sharing easy recipes. Especially ones that allow you to use up ingredients you may already have in the refrigerator and need to get rid of. Both this dressing and salad are a great option for that.
What is Green Goddess Dressing
This type of dressing originated out of California and is a beautiful mix of herbs, lemon, garlic and something that makes it creamy. Traditionally, mayo is what gives the green goddess dressing it's creamy texture. However, I am trying to keep things as healthy as possible around here, so I used cashews to create a creamy consistency. Tip - soaking the cashews before adding them to the dressing makes it much easier to blend.
